Vegetables & couscous

Since I didn’t get a chance to get out and pick up a bottle of Guinness beer my plans for making this shepherd’s pie was put off till tomorrow. So as suppertime approached I couldn’t decide what to make… A nice soup would have been good since it got so cold today but I didn’t have all the ingredients for a brodo. One thing I knew I had was vegetables so I decided to make some couscous with all the vegetables I could find in my fridge.

Couscous doesn’t photograph well! This was one really yummy plate.

This dish is so easy to make and there is no real recipe to follow. I basically used all the vegetables I had: zucchini, cauliflower, orange pepper, onion and mushrooms. I chopped everything up and stir fried them. I browned the cauliflower in a separate pan with 1 tbsp of oil but I suppose you can mix it all up together. Once the vegetables were ready I prepared my couscous.

As for the couscous, there are many ways to prepare it but I always do it as follows:

  • Boil 1 cup of water with 1 tbsp of oil.
  • Remove from heat and add 1 cup of couscous and let stand for about 2 minutes (till fluffy).
  • Add 1-3 tbsp of butter or margarine, stir with a fork to remove any clumps over low heat.

This method takes about 5 minutes.

Now all you have to do is mix it all up and there you have it – couscous with vegetables. A hearty and healthy meal.
